Amber Riley, also known as Glee‘s number one diva, is adored for her fiery outspoken role. But we caught up with the musical talent and she recently let it be known that we will be seeing a new softer side of Amber’s character and that she will even have a certain new love interest, formerly a part of the Friday Night Lights TV cast.

Besides sharing info on Mercedes’ new character transformation, the actress/singer/dancer let us in on some personal tidbits, like the fact that she has crush on hip-hop’s head honcho, Jay-Z and details on how she gets down in the kitchen with her cast mate Lea Michelle.

GlobalGrind: What was your favorite thing you did this summer?
Amber Riley: Oh my gosh, I got to travel. I went to London, I went to Manchester, I went to Ireland, actually on the tour, so that was a lot of fun for me. I have this thing where I want to visit all the countries and all the states even though it won’t happen, but Glee has kind of made that happen for me and I’ve visited almost all the 50 states so far.
You and Leah were cooking a bunch of great stuff in her kitchen, are you a good cook?
I’m a GREAT cook. All the girls are foodies. We all cook very very well, hors’ d’oeuvres are Jenna’s sweet spot. She makes great salads and hors’ d’oeuvres, but me and Leah and Nia Rivera can cook, we cook great.
What’s your favorite thing to cook?
Macaroni and cheese, I make the best macaroni and cheese.
Our lips are watering … What’s the best album of the year so far?
Oooo.. oh duh Adele, what am I thinking? Best album of the year hands down and the numbers have shown that she’s amazing.
Celebrity Crush?
Um… Well my girl crush is Adele, she already knows that, because I’m her stalker. My biggest celebrity crush, I can’t say that, she’ll kill me. My second celebrity crush is probably Jay-Z, I think he’s amazing.

Speaking of which, talk to us about your performance of “Empire State Of Mind.”
It was great, it was actually amazing because we performed that in NY, and that song just gives so much pride to New York City. I actually met the writers of that song at the Grammys and they were like, ‘You did such an amazing job on our song.’ I was so honored that they thought I did a good job.
Halloween, do you have any plans? Are you still a trick or treater?
You know what, I had a Halloween party last year and it was so much fun. I had a big projection screen, put it in my backyard and we watched Freddy Kruger. So I think that I may do that again this year. I moved, so I don’t have as much space, but I think that it could be pretty fun.
What did you do to commemorate 9/11?
I had a couple of friends and family members that actually were affected by it. They had a couple family members that actually worked at the World Trade Center so I just called them, tried to see how they were doing. I sent a little tweet out for all the people that were affected by 9/11.
Can you tell us anything about the upcoming season?
Yeah, there’s a lot that’s going on. Mercedes has a boyfriend this season, his name is Lamarcus Ticker, he was actually on Friday Night Lights, he’s an amazing actor, very sweet guy. We’ve had great scenes together, you see a softer side of her and Rachel Berry and Mercedes Jones actually have a sing-off, they have a diva-off. Another one, but this one, this time, they’re singing the same song, it’s not a duet, so that should be interesting.

Are you possibly thinking about a solo album?
I’m actually in the works of doing my album right now. Right when I came back from tour I started in the studio, writing. I have a lot of song done and now I’m in the process of writing, so the album should actually be out, or something be out by I say January or February. So people will be hearing something by then.
Did you happen to catch Serena Williams at the US Open?
Yes! I watched tennis over football, which never happens. It was amazing, amazing.
