Crudo is Mexican for hangover, the crushing headache and remorse you feel after a night of binge drinking and, perhaps, sleeping with the wrong person.

Whether you have tequila, vodka, red wine, cerveza or a combination of all on Cinco de Mayo ― which is only celebrated in Puebla, Mexico and the United States ― there are excellent ways in which you can save yourself from hugging the toilet in the morning.

Today we’re going to focus on Mexican cures for crudo, looking at typical foods that line the stomach as a preventative or a curative. Check them out after the break.

Pancita is a Mexican hangover cure made from tripe, the lining of a cow’s intestines, chickpeas and peppers. In other Latin American countries, its called menudo, like the group. In sum, the recipe calls for cooking tripe and chickpeas separately.

A simple mole, or chile puree, is made from mulato chiles, garlic, salt and pepper. The puree is fried for a bit (8 minutes) in lard, and then the chickpeas, tripe, and broth are added, and cooked till blended. See video demonstration after the break.

Nopales con juevos/fried cactus.

A recent study by researchers at Tulane University found that extract from prickly pears, which are a species of cacti, alleviates a few hangover symptoms such as nausea, dry mouth and loss of appetite. Chilaquiles 

Chilaquiles is a traditional Mexican dish and is very easy to make because it’s basically leftovers of beans, tortillas, cheese, salsa and whatever else you had for dinner last night, fried. The recipe is really flexible in that you can add anything including eggs and meat. The hangover cure comes from the grease in the dish. Recipe after the jump.
